About the Chefs

With deep roots in Mexico and decades of combined culinary experience, Chefs Gino Calleja and José Rojas bring a heartfelt approach to modern Mexican cuisine at Kolucan.

Gino, born in San Lucas Colucán, Mexico, has long been dedicated to sharing the authentic flavors of his heritage. After formal training at The Art Institutes of New York City and leading kitchens like Siesta Key Oyster Bar, he opened Reyna’s Taqueria—named after his mother, Doña Reyna—and later co-founded Kolucan, a tribute to his hometown.

José’s culinary journey began at age 15 in Mexico City, washing dishes and learning to cook from the ground up. After moving to Sarasota, he worked his way through beloved local spots like Louies Modern, Libby’s, Café of the Arts, and Summer House, eventually becoming a sought-after private chef.

Now, as partners at Kolucan, Gino and José combine their deep respect for family traditions with innovative techniques. Every dish is a celebration of their past and a creative expression of the diverse, regional flavors of Mexico. For them, cooking isn’t just a profession—it’s a way to bring people together and offer guests a true taste of home.
