Clayton Parrett

(ICON EATERY & BAR) Growing up in the heart of Cajun country, Louisiana native Clayton Parrett started his gastronomic career learning unique ways to prepare game from several generations of his Cajun, French, and Creole relatives. Even through his broad training from LSU to UCF, it is no surprise his passion lies with French cuisine.
Chef Clayton has managed many culinary operations including both the U.S. Tennis Association and the Orange County Convention Center, the second largest in the United States. When asked what his plans are for Icon Eatery & Bar at the new Legacy Hotel at IMG Academy, Chef Clayton said, “I plan to establish and elevate Florida’s native cuisine. I want our restaurant to be renowned not only in this community, but in the State of Florida for its seasonality, origin and creativity.”
